Several Greene County businesses cited for cold-holding violations (2024)

This past week, a quarter of the food establishments inspected by the Springfield-Greene County Health Department had issues with keeping cold food items at the proper temperature, according to the inspection reports.

Of the 44 routine inspections, 11 had priority violations for items being above 41 degrees. The businesses cited for cold-holding violations ranged from convenience stores to sit-down restaurants.

Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to theSpringfield-Greene County Health Department.

Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports.

Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

Asia Food and Gift Market, 1314 S. Glenstone Ave., Springfield. June 14 routine inspection – Result: active. One priority violation: Observed 100% ethanol stored directly on top of boxes of carbonated drinks, which was corrected on site and education provided. No non-priority violations.

Bambino's Cafe & Bake Shop, 2810 E. Battlefield Road, Springfield. June 13 routine inspection – Result: permitted with re-inspection. Four priority violations: Observed no air gap on pre-rinse sprayer, which is a repeat violation and re-inspection required; observed cantaloupe above 41 degrees Fahrenheit, which was corrected on site; observed sanitizer exceeding 500 parts per million, education given and re-inspection date set; observed employee's coffee with no lid in food prep area, education given and corrected on site. Five non-priority violations: Observed can opener was dirty, which is repeat violation that was corrected on site; observed hole in the wall by mop sink — which was discussed at previous inspection — worn tiles in cook's station and missing ceiling tile in chemical closet, education given; observed multiple open pitches of tea being stored in hand sink, which is a concern for cross-contamination that was corrected on site; observed leaking on food products in true two-door cold holding, education given; observed no test strips for quaternary sanitizer and that bleach test strips were expired, education given.

Bambino's Cafe & Bake Shop, 2810 E. Battlefield Road, Springfield. June 18 re-inspection – Result: active. All priority items corrected. No violations noted.

Baymont Inn & Suites, 1610 E. Evergreen St., Springfield. June 18 routine inspection – Result: active. No violations.

Casey's General Store No. 3012, 2715 W. Chestnut Expressway, Springfield. June 18 routine inspection – Result: active. A re-inspection will be made on or after June 21 to check refrigeration and time as a control, as well as cleaning issues. One priority violation: Observed right prep refrigerator was at 51 degrees and some potentially hazardous food items were discarded or relocated. Two non-priority violations: Observed coving missing or loose in dry storage and dish room, soap dispenser off wall in women's restroom, fans in both restrooms were loose and there was moderate ice buildup on both walk-in freezer doors; observed floors in kitchen, dish room, dry storage area and around soda storage were unclean.

Casper's, 937 S. Glenstone Ave., Springfield. June 13 routine inspection – Result: active. No violations cited.

Cedars Restaurant, 3322 S. Campbell Ave., Springfield. June 17 routine inspection – Result: active. Two priority violations: Observed large meat slicer dirty with food debris, which was corrected on site by cleaning before inspection ended; observed cut tomatoes at 48 degrees and buttermilk at 49 degrees in walk-in cooler, which was corrected by discarding items and monitoring unit going forward. Three non-priority violations: Observed no paper towels available at hand-washing sink, which was corrected by manager providing paper towels; observed containers of rolls and bread were unsealed/uncovered in kitchen with flies present, which was corrected by covering bread; observed bag of onions stored directly on floor in storage area, which was corrected by discarding onions.

Two priority violations: Observed coleslaw made in-house was multiple days old and not dated, which was corrected by discarding; observed far left soda gun not clean and meat slicer not clean, which was corrected on site by cleaning both. Three non-priority violations: Observed no test kit for sanitizer in bar or kitchen, education given; observed shelled eggs stored over ready-to-eat items like shredded cheese, Italian dressing and tzatziki sauce, which was corrected on site; observed no covered wastebasket in women's restroom, education given.

Fair Grove Senior Center, 122 S. Orchard Blvd., Fair Grove. June 17 routine inspection – Result: active. No violations observed.

Flat Creek Bar and Grill, 772 E. U.S. Highway 60 East, Republic. June 12 routine inspection – Result: permitted with re-inspection. Three priority violations: Observed cream at 43 degrees in bar cooler; observed food prep employee's bandaged forearm was not properly covered, which was corrected at time of inspection; observed food debris on cleaned slicer. Three non-priority violations: Observed broken and missing tiles by fryer; observed no soap at wait station hand sink; observed no paper towels at wait station hand sink.

Two priority violations: Observed container of cooked pork measured between 46 and 49 degrees in lower prep table, which was corrected on site by discarding pork; observed chlorine solution at three-vat sink tested at 0 ppm, which was corrected by remaking solution. Leslie Mexican Supermarket - Meat Department, 216 S. Glenstone Ave., Springfield. June 13 routine inspection – Result: permitted with re-inspection. Re-inspection needed for cooler not holding 41 degrees or below. One priority violation: Observed raw meat display cooler holding at 55 degrees and raw steak at 44 degrees, all raw meat prepped recently and was moved into function cooler, which will not be used for potentially hazardous foods until repairs/replacement has been made. Two priority violations: Observed jug of milk at 53 degrees and two containers of yogurt sauce at 51 degrees in the two-door stainless steel cooler, both of which were discarded, and an ambient air temperature of 53; observed bottles of opened lemon juice that required refrigeration after opening was stored without refrigeration, which was discarded. One priority violation: Observed cold-holding unit holding milk, orange juice and whipped cream above 41 degrees, all of which were discarded, and unit will not be stocked with potentially hazardous food until unit is repaired/replaced and inspected. Wendy's No. 34, 3339 W. Kearney St., Springfield. June 18 routine inspection – Result: permitted with re-inspection. Re-inspection will be made on or after June 24 to check refrigeration and fly issues. Facility was also checked to see if recent construction was completed properly, with one area of wall-floor juncture missing grout. Two priority violations: Observed chocolate Frosty machine was running at 45 degrees, milk was at 45 degrees and chocolate milk was at 44 degrees in small refrigerator, which were all discarded voluntarily; observed several flies in food preparation and dish washing areas, landing on food contact surfaces. No non-priority violations.
